Valerio Serino e la compagna Lucia De Luca hanno ricreato un piccolo angolo d’Italia in Danimarca. Ma non l’Italia della tradizione e degli stereotipi, abituata alla cucina tradizionale, ma quella che vuole attraverso l’avanguardia ridettare i canoni di una nuova tradizione. Da quando è nato nel 2017 ha subito imposto la sua scelta di grande attenzione all’ambiente ed alla sostenibilità ambientale. Gli ingredienti sono di provenienza locale da allevamenti, pescatori e produttori biodinamici. Anche la scelta della carta dei vini segue lo stesso concetto della cucina. Per provare un menu tutto al vegetale, c’è bisogno di una prenotazione preventiva di almeno 48 ore. Cultura italiane e danese, attenzione all’ambiente, il tutto miscelato con grande sapienza e buon gusto.
