Ricerca ossessiva delle materie prime di territorio da agricoltura sostenibile, attenzione all’ambiente e alla stagionalità così come alle intolleranze alimentari. Una ‘carta’ dei gusti in continua evoluzione, dai classici a base latte ai sorbetti fino ai gastronomici serviti in coppetta, come cacio e pepe, burro e alici, fave e pecorino.
