In un quartiere popolare, “Nino u’ Ballerino”, focaccere da quattro generazioni, propone i grandi classici del cibo di strada palermitano. Nino deve la sua fama al suo panino con la milza ma soprattutto ai movimenti durante la “conzatura”, cioè la preparazione del panino: una vera e propria “danza” a suon di musica a cui deve soprannome di “Ballerino”. Imperdibile il pane e panelle, un cibo povero ma gustoso a base di farina di ceci. Alle panelle si abbinano le soffici crocchè, a base di patate e latte. Un must è il pane con la milza: questa pietanza, di esclusiva tradizione palermitana, consiste in una pagnotta morbida (vastella), spolverata di sesamo, che viene imbottita da pezzetti di milza e polmone di vitello soffritti nella sugna. Ad impreziosire il panino possono dare una mano il caciocavallo o ricotta (pani maritatu, cioè sposato) in alternativa accontentatevi di una spruzzata di limone (pani schettu, ossia celibe). Un investimento di pochi euro di cui non vi pentirete.
