È il tradizionale fornello pugliese con un lungo bancone a vista della carne e annesso un grande fornello per la cottura alla brace. Si è rifatto il look La Tradizione e oggi sfodera l’aria curata del ristorante, con luci soffuse e belle foto artistiche ai muri. Non fatevi scoraggiare dalla quantità di gente che si vede già all’esterno, i tempi di attesa prima di sedersi al piano superiore, sono piuttosto rapidi. Una volta dentro, difficile non sgranare gli occhi davanti alla vasta scelta di specialità esposte, per lo più carne della Murgia e Lucana, che Lorenzo Milano, il giovane cuoco, e il suo staff sono pronti a illustrare. E vai con la varietà di bombette dalle classiche alla Cacio e Pepe, dai Porcini, con noci e Gorgonzola, alla Martinese. E poi i piccoli “gnomaredde”, gli spiedini, le grandi costate di podolica, l’immancabile zampina di Sammichele cioè una salsiccia mista ben condita e arrotolata su uno stecchino, tutte sapientemente cotte, tenere e succulente.
This place has a traditional Puglia cooktop with a long counter, hanging meats and a large oven for char-grilling over wood embers. La Tradizione has recently restyled its look, and today has the well-kept air of a restaurant with soft lighting and beautiful artistic photos on the walls. Do not be discouraged by the number of people that you will see from the outside. The waiting times to be seated on the upper floor are quite short. Once inside, it is difficult not to let your eyes wander over the vast choice of displayed specialties, mostly meats from Murgia and Lucana. Lorenzo Milano, the young cook, and his staff are ready to illustrate them for you. There is a variety of the classic bombetta pasta dishes such as cacio e pepe, with porcini mushrooms, with walnuts and gorgonzola, and alla Martinese. And then there are the tiny “gnomaredde”, the roasted skewers, the great podolica steaks, and the ever-present zampina di Sammiche which is a mixed sausage that is well-seasoned and rolled on a stick. Everything is perfectly cooked, tender and succulent.
