Il Mercato Centrale di Roma aperto alla stazione Termini tre anni fa è ormai diventato un punto di riferimento per migliaia di viaggiatori, che a pochi minuti dal proprio binario di partenza hanno la possibilità di scegliere tra decine di postazioni, anche con qualche proposta di cucina ‘etnica’. E’ il caso della Bottega di Akira Yoshida, con un banco interamente dedicato al ramen (il popolare piatto giapponese di vermicelli in brodo). Piccolo menu, anzi piccolissimo, con la possibilità di scegliere 4 varianti di ramen tutte “casalinghe”, cioè con pasta fatta a mano e il brodo dalla lunghissima cottura, secondo tradizione: Assari Shoyu, cioè la versione vegetariana, con mais, salsa di soia e olio di porro; la versione “Black”, più saporita, con brodo di maiale e salsa di soia; il ramen White Shio e la variante piccante “Red Spicy”. Una zuppa calda, saporita ma leggera, con i vermicelli cotti al momento, per un piatto unico piacevole e corroborante al costo di 10 euro.
The Mercato Centrale in Rome opened at the Termini train station three years ago. It has become a landmark for thousands of travelers, who can choose from tens of stalls just a few minutes from their railway platforms. There are even a few ethnic cooking options. This is the case of the Bottega di Akira Yoshida, who has an entire counter dedicated to ramen (the popular Japanese dish of noodles in broth). The menu is small, actually it is tiny, with only 4 variations of ramen, all of which are homemade. By this we mean that the pasta was made by hand and the broth from a traditional recipe with a long cooking time. Assari Shoyu, which is the vegetarian version, comes with corn, soy sauce, and leak oil. The “Black” version has a stronger flavor and is made with pork broth and soy sauce. The remaining two are the White Shio ramen and the spicy “Red Spicy.” It is a hot soup, tasty but light, with noodles cooked to order. It is an enjoyable, fortifying single dish for 10 euros.
