Dal 1963 questo locale, pur con tutte le sue trasformazioni, è sempre stato una certezza assoluta, una bandiera della cucina del pesce d'acqua dolce ad alto livello, capace di essere al tempo stesso pulita e moderna, precisa nella esaltazione dei sapori. maionese di rape rosse, sedano d’acqua; Bisque di gamberi di torrente, elicriso; Ravioli di patate affumicate, anguilla, genziana e l'altro dedicato al territorio, più terragno, ma altrettanto pensato tra cui
spicca l'indimenticabile piccione con le ciliege. Così impostato il locale dei fratelli Serva ha attraversato quest'anno difficile. Di questa cucina l'aspetto della modernità si coglie soprattutto nell'uso
attento e non scontato delle erbe e degli odori. Dolci non stucchevoli, in linea con questa cucina non urlata ma di grande sostanza. Grandissima carta dei vini. Since 1963 this place, despite all its transformations, has always been an absolute certainty, a place of high-level freshwater fish cuisine, capable of being both clean and modern, precise in the exaltation of flavors. There is a menu entirely dedicated to the lake, with dishes such as Carp with beetroot mayonnaise and water celery; Stream prawn bisque with helichrysum; Ravioli with smoked potatoes, eel, gentian; as well as the other specialties, dedicated to the territory, more earthy, but equally well-thought including the unforgettable pigeon with cherries, which definitely stands out. This is how the Serva brothers' restaurant dealt with this challenging year. The aspect of modernity of this cuisine is evident, above all in its careful and not obvious use of seasoning and herbs. The desserts are never redundantly sweet, definitely in line with this cuisine that is not “shouted” but still of great substance. The wine list is really great.
