A monopolizzare l'offerta grandi classici come il "pane panelle e crocchè: una mafalda cosparsa di semi di sesamo farcita con le tipiche frittelle a base di farina di ceci, prezzemolo e pepe; alle panelle di aggiungo le crocchè di patate, rigorosamente profumate alla menta. Intramontabile il "pani ca' meusa", il tipico panino rotondo (vastella) imbottito con milza, polmone e trachea precedentemente bolliti e poi soffritti nella "sugna" (strutto); i più golosi preferiranno la versione "maritata" con ricotta fresca e caciocavallo grattuggiato, i puristi invece si accontenteranno di una spruzzata di limone. Nel bancone trovano anche posto le arancine, al burro o alla carne, e lo sfincione, tipica pizza palermitana a base di farina di rimacino condita con salsa di pomodoro, cipolla, acciuga, pangrattato e caciocavallo. The more gluttonous will prefer the “maritata” (married) version with fresh ricotta and grated caciocavallo; those who prefer more simple flavors will be satisfied with just a squeeze of lemon on it. On the counter, you’ll also find arancine (rice balls) with butter or meat and sfincione, a typical Palermo pizza made with rimacino flour topped with tomato sauce, onion, anchovies, breadcrumbs and caciocavallo.
